Easy in the Islands Chicken Thighs

An easy to make chicken dish with a tropical flavored sauce, red pepper and bananas.
 

Ingredients

  • 2 Tbsp olive oil
  • 4 lbs chicken thighs
  • 1/4 cup fresh lemon juice
  • 1/4 cup fresh lime juice
  • 1/2 tsp salt
  • 1/2 tsp fresh ground pepper
  • 1/2 cup brown sugar
  • 3/4 cup orange juice
  • 1/4 cup white wine vinegar
  • 1 Tbsp candied ginger
  • 2 Tbsp soy sauce
  • 3 Tbsp cornstarch
  • 1 red bell pepper, coarsely chopped
  • 1 cup onion, finely chopped
  • 2 cloves garlic, chopped
  • 2 bananas, peeled and sliced

Method

Brush a large cassarole or baking pan with olive oil and place chicken pieces in it. Top with lemon and lime juices, salt and pepper. Bake in a preheated 350 degree F oven 1 hour. While the chicken bakes, combine in a saucepan the brown sugar, orange juice, vinegar, ginger, soy sauce and cornstarch, and blend well. Cook over low heat, stirring constantly until the mixture starts to thicken. Stir in the onion, bell pepper and garlic. Cook, stirring, another 5 minutes. Add bananas and cook another minute. Pour this over chicken pieces in pan and continue baking another 10 minutes.
