Easy Grilled Chicken

Cut up pieces of chicken are marinated in orange juice and green tomatillo salsa, then oven-baked, and finished on the grill.
 

Ingredients

  • 1 whole chicken, cut up
  • Juice of one orange (about 1/3 cup)
  • 1 16-ounce bottle green tomatillo salsa

Method

Place chicken in an oven-proof baking dish. Pour orange juice over chicken then salt and pepper generously Pour salsa over chicken to cover. Marinate in refrigerator two hours or overnight. Bake in a 325 degree oven until juices run clear, about 1 hour. Cool chicken in its juices. Prepare grill and when hot, move chicken to a platter; spray with oil to prevent sticking. Grill until crisp and brown, about 15 minutes.

 

Notes: Can be prepared ahead. Chicken can be returned to the refrigerator after baking, and held in its juices, until ready to grill and serve. Can also be finished under the broiler rather than on the grill.
