Easy Chicken-Noodle Soup

Cut-up chicken is cooked and the meat is removed, chopped, and cooked with potatoes, carrots, wide egg noodles and seasonings.
 

Ingredients

  • 1 fresh chicken, cut-up
  • 2 cans chicken broth
  • 2 tablespoons dried parsley
  • 3 large potatoes, peeled and cut into bite size pieces
  • 2 carrots, peeled and cut into bite sizes
  • 1 12-oz. bag wide egg noodles.
  • 1 teaspoon seasoned salt
  • 1 teaspoon onion powder.

Method

Boil chicken in 6 cups water till done. Remove pieces; let cool, then skin and debone chicken. Cut or shred chicken into pieces. Strain cooking liquid and return it to the pot. Add canned chicken broth, chicken, potatoes, carrots and seasoning; cook till tender. Bring to boil; add noodles and cook until noodles are tender.

 

Notes: Can be served with crackers or a sandwich; this is a hearty soup.
