Easy Chicken Casserole

A tasty casserole that is easy to prepare, full of veggies, chicken, noodles, and cheese.
 

Ingredients

  • 1 Can of mixed Veggies
  • 1 Can of Cream of chicken soup
  • 1 Can of Cream of mushroom soup
  • 1 Can of Rotel
  • 4 boneless chicken breasts (or whichever you prefer)
  • 1 medium package of Velveeta Cheese
  • 1 Package of Egg noodles
  • 1 casserole dish

Method

First you put your chicken on to boil. Make sure you cut up your Velveeta cheese into little squares, or something that will make melting easy. You then mix your veggies, Rotel, and your soups and cook to a slight boil. Start adding your cheese, until it is melted, make sure to keep the heat low in order not to burn the mixture. Once cheese is melted, you can either take off burner, or put burner on low but make sure to stir often. Place Egg noodles in large pan with water and bring to a boil. Drain noodles when they are done. Once your chicken is done, slice into small pieces, and add this to your cheese/veggie mixture. In a large mixing bowl, combine all ingredients, including noodles. Pour this into your casserole dish, and if there is any cheese left over, place it on top of casserole. Cook in the oven at 350 degrees, until hot, or cheese on top has melted.

 

Notes: This recipe seems to take longer than it actually does. Total cooking time is about 20-25 minutes, and total baking time is about 10-15 minutes. This is an excellent casserole, even better when reheated!!!
