Easy Cassoulet

A hearty casserole with chicken and cannellini beans--delicious, and so easy.
 

Ingredients

  • 4 chicken thighs
  • Salt and pepper
  • Garlic powder
  • 2 shallots, chopped
  • 2 Tbsp oil
  • 2 Tbsp white wine
  • 15 oz can white cannellini beans
  • 2 strips bacon

Method

Preheat oven to 350 degrees F. Season chicken thighs (or use other parts if you prefer) with salt, pepper and garlic powder, and place in roasting pan. Coat with oil and white wine. Sprinkle with chopped shallots. Bake at 350 degrees F until browned (turn once) and internal temperature reaches 180 degrees. While chicken is cooking, saute bacon over medium heat in large fry or saute pan until brown and crisp. Remove bacon, place on paper towels to drain, and set aside. In same pan, cook beans slowly in bacon drippings until hot. When chicken is done, add it (along with its pan drippings) to the beans, and season with garlic powder, salt and pepper to taste. Heat through. Crumble reserved bacon over top. Serve with a green salad.

 

Notes: For an extra hearty cassoulet, you can also add slices of kielbasa that you can cook right along with the bacon. Add the kielbasa to the beans along with the chicken.
