Cheesy Tortilla Chip Casserole

Tortilla chips, chicken and cheese in a creamy chicken gravy makes a hearty Mexican casserole.
 

Ingredients

  • 1 large bag cheese flavored tortilla chips
  • 4 large skinless chicken breasts
  • 1 block cheddar cheese, grated
  • 1 medium onion
  • 1 tsp ground cumin
  • Salt and pepper to taste
  • 2 cloves garlic
  • 2 tbsp flour
  • 2 tbsp cooking oil
  • 1 tsp chili powder
  • 1 1/2-2 cups chicken broth

Method

Boil chicken in water with cumin, salt, pepper, garlic and onions together. Place chips in a 9 X 13 baking dish. Mix half of cheese with chips. In a skillet, combine oil, flour, and chili powder and cook for 60 seconds over low heat. Remove from heath,add chicken broth to make gravy, and cook over medium heat until it thickens. When thick, pour over chips and add remaining cheese. Bake at 350 degrees for 25 to 30 minutes, or until heated through.

 

Notes: Serve with rice, beans and a salad.
