Dilly Chicken Salad

This quick-to-fix salad for two combines chicken, celery and golden raisins in a low-fat dressing with yogurt, cream cheese & dill.
 

Ingredients

  • 1/2 cup plain low fat yogurt
  • 2 Tablespoons low fat garden vegetable cream cheese
  • 1 Tablespoon chopped fresh dill (or 1 tsp dried)
  • 1 cup cubed, cooked white chicken meat
  • 3/4 cup thinly sliced celery
  • 1/4 cup golden raisins
  • Salt and pepper to taste
  • Leafy greens

Method

In a large bowl combine yogurt, cream cheese, and dill. Mix well and add chicken, celery and raisins. Add salt and pepper to taste. Serve on a bed of greens.

 

Notes: I grow my own dill and dry it for use during the winter. You can use fresh or dried dill here.
