This perfectly roasted chicken is soaked in a homemade brine to insure a great flavor and maximum succulence. Add roasted vegetables and dinner is served.
 

Ingredients

  • 1 whole chicken, 6 to 8 lbs
  • 1 1/2 cups salt
  • 1 1/3 cups sugar
  • 2 medium heads of garlic cloves, peeled and crushed
  • 6 bay leaves, crumbled
  • Ground black pepper
 
Method

Dissolve salt and sugar in 1 gallon of cold water, stir in garlic and bay leaves, immerse chicken and refrigerate in brine for up to 2 hours. Preheat oven to 400 degrees, adjust rack to middle position, remove chicken from brine and pat dry. Season chicken on all sides with black pepper, place wing side down on V-rack in roasting pan and roast for 30 minutes. Remove pan from oven and rotate chicken using two wads of paper towels to other wing side down. Continue to roast for 30 minutes. Remove pan and rotate chicken to breast side up, roast until chicken is golden brown and instant read thermometer registers 160 degrees in thickest part of breast, about 40 minutes. Remove chicken from oven, place on cutting board, let rest.
