Cuban Chicken Salad

Shredded cooked chicken and cubed potatoes are tossed with lettuce and mashed canned asparagus, and moistened with mayonnaise to make this salad.
 

Ingredients

  • 2 whole chicken breasts, cooked and shredded
  • 2 1/2 lbs potatoes, boiled and cut into small cubes
  • 1/2 head iceberg lettuce, shredded
  • 1 can asparagus spears, mashed
  • 1 jar pimientos, sliced into thin strips
  • 1/3 to 1/2 cup of mayonnaise (may be light, if desired)
  • Salt and pepper

Method

In a bowl, combine boiled potatoes, chicken, lettuce and asparagus and blend well. Add mayonnaise to desired consistency; add salt and pepper to taste. Refrigerate at least two hours. Place some of the sliced pimientos on top of salad to give it nice color and presentation.

 

Notes: This is an easy recipe that is filling and can be served as a main dish or side dish. I usually serve it as a side dish when I make polenta.
