Creamy Chicken Dream

Serve a tossed green salad with these baked chicken breast halves to complete your dinner menu.
 

Ingredients

  • 1/2 cup all-purpose flour
  • 1 teaspoon seasoned salt
  • 4 boneless, skinless chicken breast halves
  • 2 slightly beaten eggs
  • 2 cups saltine cracker crumbs
  • 1/4 cup vegetable oil
  • 1 can reduced-fat cream of chicken soup
  • 1/2 can low-fat milk

Method

In a shallow dish combine flour and seasoned salt. Coat chicken breasts with flour mixture. Dip into eggs, then coat with cracker crumbs. Preheat oil in a large skillet. Cook chicken breasts in hot oil until brown, turning once. Transfer breasts to a baking pan. Combine soup and milk; pour over chicken. Bake in a 350 degree oven about 30 minutes or until chicken is done.
