A wonderful chicken casserole made with green peppers, onion, and tomato with a nice hint of curry.
 

Ingredients

  • 1 chicken
  • 1/2 cup flour
  • 1 t. salt
  • 1/8 t. pepper
  • 1/4 cup oil
  • 3/4 cup onion
  • 1 green pepper in strips
  • 2 T. butter
  • 1 clove garlic minced
  • 5 cups canned tomato
  • 1/2 cup raisins
  • 1 1/2 t. salt
  • 1/2 t. pepper
  • 1 T. curry
  • 1 T. butter
  • 1/2 cup almonds
  • 1/2 t. leaf thyme, crushed
  • 1 T. parsley

Method

Coat chicken in flour, salt and pepper and brown. Set aside. Saute onion, green pepper and garlic in 2 T. butter. Add tomatoes, raisins, salt, pepper and curry Simmer 10 min. Place chicken in 3 qt. casserole. Pour on sauce; cover and bake for 1 hr. at 350. Melt 1 T butter in small skillet; add almonds and stir over medium head until delicately browned. Sprinkle thyme, almonds and parsley on chicken just before serving.
