Confetti Turkey Salad

Diced cooked turkey is combined with colorful vegetables (red sweet pepper, celery, green onion, tomatoes and avocodo) for this main dish salad.
 

Ingredients

  • 1/2 cup finely diced red pepper
  • 1/2 cup finely diced celery
  • 1/2 cup thinly sliced green onions
  • 1/2 cup sweet pickle relish
  • 1/2 cup mustard-mayonnaise blend sandwich spread (Dijonaise)
  • 3 hard cooked eggs
  • 3 cups diced cooked turkey
  • 1/2 teaspoon salt
  • 1/2 teaspoon lemon-pepper seasoning
  • 12 large butter lettuce leaves
  • 2 medium ripe tomatoes, sliced
  • 1 cup alfalfa sprouts (optional)
  • 1 medium ripe avocado, sliced

Method

In a medium bowl mix red pepper, celery, green onions, pickle relish and sandwich spread. Peel and dice hard cooked eggs and fold into mayonnaise mixture. Add diced turkey, salt and pepper; cover and refrigerate until ready to serve. To serve line 6 plates with two lettuce leaves, divide turkey salad between plates; garnish with tomato slices, sprouts, and avocado.

 

Notes: This is my "secret weapon" for feeding family and overnight guests the day after Thanksgiving. Everyone loves this salad and the recipe can easily be doubled for a large group. Tucked in a cooler this makes a great picnic salad (pack sliced tomatoes separately and add right before serving). I also make this with leftover ham from Easter Sunday supper; it's a handy way to use up leftover Easter eggs, too!
