On the top of the stove on medium heat put the oil in the frying pan. Coat chicken pieces with a mix of flour, salt & pepper. Shake off excess, then slowly brown the chicken, about 12 to 15 minutes. When browned take the chicken out of the pan and put in the garlic, broccoli florets and coconut milk. Simmer for 3 minutes and then add the chicken back to the pan. Cover and cook about 10-12 more minutes until chicken is no longer pink; serve over rice.
Beef can also be used in this dish. Corn, peas or mixed vegetables can also be used.
