Clear Chicken Soup

This soup contains pieces of chicken, onion, green chilies and tomato, plus evaporated milk or whole milk. Garlic and cumin are added for flavor.
 

Ingredients

  • 1/2 pound skinless, boneless chicken
  • 1 tbsp cooking oil
  • 1 small onion, chopped
  • 2 tsp minced garlic
  • 1/2 tsp cumin seed
  • 2 green chilies, slit in half
  • 1 tomato chopped
  • Salt and pepper to taste
  • 1/2 cup evaporated milk or whole milk
  • 5 or more cups water--to desired consistency
  • Lemon juice

Method

1. Wash and cut chicken in strips 2. Heat oil in a medium pot 3. Add garlic and saute, then add onions, cumin, green chilies; fry slightly 4. Then add the chicken pieces and saute a few minutes 5. Add the chopped tomatoes, salt, pepper, then mix in the water and let it come to a boil. 6. As the soup boils, mix in the milk gradually and let it simmer for 1/2 hour on medium low. 7. Add lemon juice when serving.

 

Notes: It can be converted to chicken noodle soup, if noodles are added to it as you boil, during the last few minutes.
