Citrus Lime Marinade for Chicken or Pork

This tangy cooking sauce with an Asian twist is great with chicken or pork. the orange marmalade adds a nice sweetness.
Ingredients
- 1 1/2 tsp. ground ginger
- 1 clove garlic, minced
- 1 tablespoon soy sauce
- 1 tablespoon cooking oil
- 1 1/2 tsp. cornstarch
- 1 tablespoon water
- 1 lime squeezed (equivalent to about a 1/4 cup)
- 3 lime slices
- 1/4 c. orange marmalade

Method
Combine ginger, garlic, soy sauce, oil, cornstarch, water, and lime juice in a small saucepan. Bring to a quick boil. Remove and spoon mixture over four chicken breasts or pork cutlets in a 2-quart baking dish. Top with lime slices and orange marmalade. Bake at 350 degrees about 45 to 50 min until juices run clear.
Notes: The dish yields a moist, tender, and gold brown chicken breast or pork cutlet. It is extremely easy and perfect for entertaining.
