Citrus Chicken

Skinless, boneless chicken breast halves are browned, simmered in grapefruit juice, and topped with sliced Muenster cheese.
Ingredients
- 4 boneless, skinless chicken breast halves
- Flour
- Lemon-pepper seasoning and salt, to taste
- Olive oil
- 1 small red onion, small dice
- 1 clove garlic, minced
- Splash of Reisling wine
- 1 cup of grapefruit juice
- 1 cube chicken boullion
- 4 slices Munster cheese

Method
Lightly coat the chicken breasts with a mixture of flour, salt and lemon pepper. To a hot pan, add a little olive oil. Add onions to pan to sweat. When softened, add garlic. Add chicken to pan and brown on both sides. Deglaze pan with wine. Add the grapefruit juice and boullion cube; simmer until sauce thickens and chicken is fully cooked. Remove from heat and add one slice of cheese atop each chicken breast. Spoon sauce on top to help melt the cheese.
Notes: Chicken should simmer about 20-25 minutes to fully cook with no lid.
