Citrus Chicken Summer Salad

A fresh tasting salad made with beans, white corn, peppers and onion in a tangy citrus dressing.
 

Ingredients

  • 2 cups cooked, shredded chicken
  • 1-15 oz can black beans, drained and rinsed
  • 1-15 oz can kidney beans, drained and rinsed
  • 1-15 oz can white corn, drained
  • 1 red bell pepper, diced
  • 1/2 red onion, diced
  • 1 mango, diced
  • 3 cloves of garlic, minced
  • 2 jalapenos, minced
  • 1 orange, juiced
  • 2 limes, juiced
  • 1/4 cup balsamic vinegar
  • 3/4 cup olive oil
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp cumin

Method

In a large bowl, toss chicken, beans, corn, bell pepper, onion, mango, garlic and jalapenos. For dressing, whisk remaining ingredients and pour over salad, toss to coat. Refrigerate until ready to serve. Serve cold or at room temperature.
