Cilantro Chicken Stew

A healthy chicken and vegetable stew--serve over rice.
 

Ingredients

  • 3 leg quarters
  • 3 cups baby carrots
  • 4 large diced potatoes
  • 1 large onion, cubed
  • 4 ears corn
  • 1 small head cabbage, shredded
  • 1 large can diced tomato
  • 3 tsp cumin
  • 3 packs sazon goya
  • 3 tsp adobo seasoning
  • 2 tsp garlic powder
  • 1 bunch cilantro, chopped
  • Salt and pepper to taste
  • 6 limes
  • 4 servings cooked rice
  • 1 large onion, finely chopped

Method

Boil chicken until tender. Add all ingredients except 1/2 cilantro, onion, limes, and rice. Cook on medium heat for 1 hour then simmer for 2 hours. Cook rice according to package directions. Serve stew over the cooked rice. Top with remaining cilantro and onion. Squeeze lime over top.
