|1 bunch||Cilantro Finely Chopped|
|1||Glove of Garlic Finely Chopped|
|2 Tbsp||Extra Virgin Olive Oil|
|1||Large Onion Finely Chopped|
Cut the large onion finely and add to a large pot with the extra virgin olive oil and let it simmer until light golden brown. Cut the chicken in small pieces and add to the pot with the onions. Finely chop the cilantro and garlic and place in the pot. Add 6 cups of water, and salt and let it simmer over high heat for 30 minutes and serve.
