Chutney Chicken Salad

Cubed, cooked chicken is mixed with yogurt, curry powder and chutney, served on a bed of lettuce topped with sliced almonds.
 

Ingredients

  • 1/2 cup lowfat plain yogurt
  • 1/4 cup mayonnaise
  • 2 Tbsp jarred mango chutney
  • 1 Tbsp (yellow) curry powder
  • 3 cups cubed cooked chicken
  • 3 Tbsp chopped dried apricots
  • 1 green onion, sliced
  • 1 stalk celery, diced
  • Mixed torn lettuce
  • 1/4 cup sliced almonds

Method

Mix mayo, yogurt, curry powder and chutney. Cover and chill 1 to 2 hours. Then add remaining ingredients, except lettuce and nuts; stir and chill at least one hour. Serve on a bed of mixed lettuce with diced almonds scattered on top.

 

Notes: You should use the yellow curry powder which is somewhat mild and creates a great color.
