Chunky Chicken and Tomato Soup


This hearty chicken soup is up to the challenge of being a soup that will satisfy. Sop up the goodness with a loaf for warm crusty bread.



Ingredients:

  • 2 cans chicken broth
  • 3 cans water
  • 1 can diced tomatoes
  • 1 small package saffron rice mix
  • 1/4 envelope onion soup mix
  • 1 tbsp garlic
  • 1 tbsp salt
  • 1 tbsp pepper
  • 2 cups each roughly cut celery and carrots (baby carrots work just as well)
  • 3 cups diced cooked chicken (left over or roasted works best)

Method

Combine all ingredients except chicken into a large pot and simmer until rice is cooked through and veggies are tender, approximately 35 minutes. Add chicken and cook an additional 10-15 minutes until chicken is heated. Add more salt and pepper to taste. Serve with crusty bread.
