Chow Mein Soup

Bok Choy, crispy rice noodles, sesame seeds, and peanuts add new and unusual flavor to this Oriental style chicken noodle soup.
 

Ingredients

  • 2 Tablespoons canola oil
  • 1 cup sliced bok choy
  • 1 bunch green onion, washed and sliced
  • 1/4 cup red bell pepper, diced
  • 1/2 cup sliced mushrooms
  • 1 cup grilled chicken, diced
  • 2 cans low sodium chicken broth
  • 2 Tablespoons sesame oil
  • 1/4 teaspoon lime pepper
  • 1/2 cup salted peanuts
  • 1 can (3 ounces) crispy rice noodles
  • 1/4 cup toasted sesame seeds

Method

Preheat oven to 325 degrees. In large Dutch oven add canola oil and saute bok choy, onion, pepper, and mushrooms for about three minutes. Add chicken, broth, sesame oil, and lime pepper. Place in oven for about 45 minutes. Serve with peanuts, rice noodles and sesame seeds as toppings.

 

Notes: I like to serve this unusual soup after we've had our fill of traditional soups. You can replace the chicken with left over grilled beef or pork.
