Chipotle Ginger Peach Barbecued Chicken


This dish not only sounds incredible but is beautiful as the final product. The flavor combination is to die for with the chipotle, ginger, and peaches.



Ingredients:

  • 1/2 cup peach or apricot preserves
  • 1 tbsp grated fresh ginger
  • 1 tbsp minced fresh garlic
  • 1/4 cup lemon juice
  • 3 tbsp vegetable oil
  • 1/4 cup apple cider vinegar
  • 1/2 tsp chipotle chili powder
  • 1 1/4 tsp salt
  • 1/4 tsp black pepper
  • 4 whole chicken breasts with skin
  • Salsa:  
  • 1 1/4 cups cucumber, peeled, seeded and cubed
  • 1/2 cup sweet red pepper, cubed
  • 1/2 cup Italian flat leaf parsley, coarsely chopped
  • 1/4 cup lemon juice
  • 3 tbsp peach or apricot preserves
  • Salt and pepper to taste
  • 2 pinches chipotle chili powder
  • 3 ripe peaches, skin on, cut in half, pits removed
  • 2 tbsp honey or maple syrup

Method

Combine first 9 ingredients in large plastic bag. Add chicken breasts and refrigerate at least 15 minutes or longer for best flavor. Heat a grill with a lid to medium high and place chicken breasts skin side up, preferably on a side with no heat and lid on. While chicken cooks prepare salsa by combining all ingredients except peaches. Refrigerate covered to blend flavors. Cook chicken, basting occasionally with marinade, about 35-45 minutes or until done. Put chicken on serving platter in oven to keep warm. Brush cut side of peaches with honey or syrup and place on grill over fire cut side down. Grill 5 minutes each side, or until grill marks show. Remove to cutting board and coarsely chop before adding to salsa. Mix salsa and serve over chicken for a complete meal. Grilled garlic bread or pita makes a nice accompaniment.

Notes: This recipe is great for company. The chicken and salsa can be prepped in the morning and chicken and peaches can be grilled in evening, making a no-fuss but elegant and satisfying meal. I tried this recipe with lime juice, but prefer the flavors with lemon juice.
