Chipotle Chicken Wraps

Chicken breast strips are cooked and combined with onion, bell peppers, cream cheese, and chipotle peppers with adobo sauce. This mixture is used, with jack cheese, to fill spinach tortillas.
Ingredients
- 4 skinless, boneless chicken breasts, sliced into thin strips
- 1 onion, sliced into thin strips
- 1 yellow bell pepper, seeded and sliced into thin strips
- 1 red bell pepper, seeded and sliced into thin strips
- 2 cloves garlic, minced
- 4 oz. cream cheese
- 1 canned chipotle pepper, minced
- 2 Tbsp. adobo sauce from the can of chipotle peppers
- 1 1/2 cups shredded monterrey jack cheese (6 oz.)
- Olive oil
- Salt & pepper
- 6 large spinach tortillas

Saute chicken strips in olive oil until no longer pink, about 5 minutes. Set aside. In same pan saute onions and garlic until translucent, 2 - 3 minutes. (You may need to add a bit more olive oil to the pan.) Add peppers; saute 3 minutes. Add cream cheese and cook until creamy. Add chipotle peppers and adobe sauce. Simmer for 2-3 minutes. Add chicken and cook until heated. Season with salt & pepper. Divide chicken mixture onto the 6 tortillas; top with 1/4 cup of the jack cheese. Wrap each like a burrito and either wrap in foil to keep warm or serve right away.
Notes: Garnish wraps with your choice of: sour cream, guacamole, black olives, corn chips, and/or salsa.
