Childhood Chicken and Rice

Just mix instant rice, chicken and two cans of soup--fast,easy and inexpensive.
 

Ingredients

  • 1 lb chicken tenders in 1" pieces
  • 1 can cream of mushroom or celery
  • 1 can cream of chicken
  • 2 cups minute rice
  • 1 clove garlic (chopped)
  • 1-2 cups milk
  • Creole seasoning (I prefer Tony's brand)
  • Salt and pepper

Method

Prepare rice according to brand you purchased for 2 cups (do not use butter as it alters flavor) and set aside. In a nonstick skillet add chicken and garlic, season with salt and pepper to taste. When chicken is cooked thoroughly add to rice. Then add each can cream of mushroom and cream of chicken. Stir in milk a little at a time until desired consistency. Put rice and chicken mixture back over heat to warm through. Season with creole seasoning to taste and serve.

 

Notes: My friend and I made this when we were short on money. It is a very easy recipe and can be altered to individual taste. Try using cream of celery instead of mushroom.
