Chicken Stew


An easy to make chicken stew with lots of vegetables and potatoes, seasoned with garlic, basil and oregano. Very hearty.



Ingredients:

  • 5 pound bag of potatoes  
  • 1 large bag of mixed frozen vegetables  
  • 3 to 4 pounds of boneless chicken cutlets  
  • 1 or 2 cans of large tomato sauce  
  • 1 or 2 cans of large crushed tomatoes  
  • Minced Garlic  
  • Chopped Onions  
  • Basil  
  • Oregano  
  • Italian Seasoning

Method

Peel 5 pounds of potatoes and cut into smaller pieces and put into the pot. Take the large bag of frozen vegetables and add into the pot. Cut up chicken cutlets into smaller pieces and add to the pot. Add in 2 Tablespoons of Minced Garlic. Add in 2 chopped Onions. Add in Large can of Tomato Sauce. Add in Large can of Crushed tomatoes. Add in the Basil, Oregano and Italian seasoning. Mix all ingredients together thoroughly. Let Simmer on a Low/medium flame for about 3 hours or until desired tenderness. Mix ingredients throughout the 3 hours that the stew is cooking so it won't burn on the bottom.

Notes: Need of a 12 quart stock pot for this hearty recipe. People also will enjoy biscuits with this meal, but not necessary.
