Chicken-Potato Soup


This soup recipe combines bacon, cubed chicken, and onion with condensed cream of chicken soup, celery, potatoes, chicken broth, whipping cream and water.



Ingredients:

  • 6 slices bacon, diced
  • 1 cup raw chicken cut
  • in small cubes
  • 1/2 cup diced onion
  • 1 can condensed cream of chicken soup
  • 1/2 cup chopped celery
  • 2 cups chicken broth
  • 3 cups water
  • 4 cups diced potatoes
  • 1/2 cup heavy whipping cream
  • 1 tsp salt (or to taste)
  • 1/2 tsp pepper
  • 1 tsp parsley flakes

Method

Saute bacon in skillet until slightly browned. Add chicken cubes and onions to skillet; saute until well done. Set aside. In large saucepan combine soup, celery, chicken broth, water, and potatoes. Simmer until potatoes are tender. Add salt, pepper, and bacon mixture. Stir and let set 5-10 minutes. Add cream. Simmer on low heat until it thickens to consistency you prefer. Sprinkle parsley flakes on top.
