Chicken Jambalaya


Chicken and sausage simmered with tomatoes and rice to make a delicious jambalaya.



Ingredients:

  • 1  (2-3 lb) chicken
  • 4  cups chicken broth either canned or bouillon cubes          
  • 1  medium onion - sliced or diced
  • 5 or 6 links mild italian sausage
  • 1  Tbs garlic
  • 1  large can tomatoes - diced,sliced, or stewed
  • 1 cup rice            
  • red crushed pepper to taste  

Method

Cook chicken in broth until done (debone and deskin) add water as it cooks if needed. While this is cooking, brown sausage. When chicken is done add all other ingredients to pot, except red pepper, add chicken bouillon cubes to broth if more flavor is needed, 1 cube to 1 cup water. Cook covered for about 45min. on simmer.
