Chicken Fajita Pizza


Chicken flavored with fajita seasoning is sprinkled on a pizza crust along with chopped tomato, onion, bell peppers, cilantro, and Mexican-blend cheeses.



Ingredients:

  • 1 12-inch prepared pizza crust
  • 3 tbsp olive oil, divided
  • 1 1/2 cups shredded cooked chicken breast
  • 1 tbsp fajita seasoning
  • 1/2 cup finely chopped tomato
  • 1/4 cup finely chopped onion
  • 1/2 cup EACH of finely chopped red, green and yellow bell peppers
  • 2 tbsp chopped fresh cilantro
  • 1 cup shredded Mexican 4-Cheese blend

Method

Preheat oven to 375 degrees. Drizzle 2 tbsp olive oil over pizza crust and set aside. In a small bowl combine chicken with remaining olive oil and fajita seasoning; set aside. Sprinkle chopped tomato, onion, peppers, and cilantro on crust, then the chicken mixture on top of the vegetables. Top with shredded cheese. Bake at 375 degrees for 12 to 15 minutes, until cheese is melted and bubbly.
