Chicken Enchiladas


Cooked chicken, onions and shredded cheddar cheese is used to fill tortillas which are first dipped in a soup, sour cream and chilies sauce. the enchiladas are then baked in a dish.



Ingredients:

  • 1 cup diced cooked chicken  
  • 1 1/2 cup grated cheddar cheese  
  • 1/2 cup chopped onions  
  • Sauce:  
  • 2 cans cream of mushroom soup or 1 can green enchilada sauce  
  • 1 can diced green chilies  
  • 1/2 cup sour cream  
  • 1/2 tsp salt    
  • 1 dozen tortillas
  •   
  •   

Method

Preheat oven to 350. Combine chicken, 1 cup of cheese, and onions. Combine sauce ingredients. Dip tortillas into sauce. Spoon some chicken mixture onto one tortilla and roll up. Place in 9 x 13 in. dish. Repeat with remaining ingredients; top with remaining cheese and any sauce. Bake until cheese is melted (20-30 minutes).
