Chicken and Potato Soup


Cubes of chicken are cooked with carrots, celery, and onion, and added to potatoes cooked in broth. Fresh spinach is stirred in at the end.



Ingredients:

  • 2 big containers of chicken broth
  • 3-4 medium potatos, cubed
  • 2 carrots, chopped
  • 2 celery stalks (with leaves), chopped
  • 2 cloves garlic, minced
  • 1/2 medium onion, diced
  • 4 skinless, boneless chicken breasts, cut into cubes
  • 1/2 package fresh spinach, chopped
  • 1 large bay leaf
  • Salt and pepper to taste

Method

In the large pot, add chicken broth and use it to cook potatoes with bay leaf. In a skillet, saute onion, garlic, carrots and celery, then add cubed chicken. When potatoes are cooked, remove bay leaf; add chicken mixture to the broth. Add salt and pepper to taste. Add spinach and cook just until the leaves wilt.

Notes: You may also season chicken with rosemary, tarragon and parsley before adding it to the soup.
