Chicken Wraps

These homemade wraps are a healthy and hearty. Add some soup and you have a great meal.
Ingredients
- 3 boneless skinless chicken breasts
- 3 tablespoons dried spinach
- 3 tablespoons dried chipotle seasoning
- 2 tablespoons water
- 1 cup sour cream
- 1 tablespoon lemon juice
- 5 tablespoons Italian dressing
- Shredded lettuce
- Sundried tomato and basil seasoning, crushed
- Shredded cheddar cheese
- Shredded pepper jack cheese
- Shredded carrots
- Sundried tomato and basil or spinach Tortilla shells

Method
Cut chicken breasts into bite sized pieces. Place in a fry pan with Italian dressing. Saute chicken until done and slightly brown. Add spinach and crushed red peppers with water. Simmer for about 5 minutes on low. In a bowl, mix sour cream, chipotle seasoning and lemon juice. Stir well and spread a good amount on tortilla shells. Add lettuce and shredded carrots on one side. Sprinkle entire shell with a large pinch of sundried tomato and basil seasoning. Add a large spoonful of chicken on top of lettuce. Then sprinkle a handful of each cheese on top of chicken. Fold both sides in on the pile. Roll from the chicken side to the empty side. Cut in half and serve cold.
