Chicken with Rice Bake

Chicken breasts baked atop of layers of bacon and rice, with cream of chicken soup poured over all.
 

Ingredients

  • 8 slices bacon
  • 1 cup rice
  • 8 skinless, boneless chicken breast halves
  • Salt, pepper, and paprika (to taste)
  • 1 can cream of chicken soup
  • 1 1/3 cups water
  • Dash garlic salt
  • 1 tsp oregano
  • 2 tsp dried parsley flakes

Method

Line a 9x13 pan with the bacon. Sprinkle bacon with uncooked rice. Place chicken breasts, skinned side up, on rice. Sprinkle with salt, pepper and paprika. Combine 1 can cream of chicken soup with water. Add a little garlic salt, oregano and dried parsley flakes. Pour over the chicken and cover tightly with foil. Bake at 300 degrees for 1 to 2 hours or till chicken and rice are done.

 

Notes: No peeking.
