Chicken Spaghetti Casserole

Cooked spaghetti, cubed chicken and a sauce containing celery, onion, green pepper, chicken broth, milk and cream of mushroom soup are layered in a casserole and topped with Mexican style cheese and cracker crumbs.
Ingredients
- 3 Tbsp. margarine
- 1 Cup chopped celery
- 1 Cup chopped onion
- 3/4 Cup chopped green pepper
- 1 Tbsp. flour
- 1 1/2 Cup chicken broth
- 1 Cup skim milk
- 10 oz. can cream of mushroom soup
- 1 large jar sliced pimentos, drained
- 2 Cups cubed, cooked chicken breast
- 12 oz. spaghetti, cooked and drained
- Shredded Mexican-style cheese
- Buttered cracker crumbs

Method
Cook celery, onion and bell pepper in margarine. Stir in flour, chicken broth and milk; cook until thickened and bubbly. Add mushroom soup and pimentos. In a 9"x13" baking dish layer half each of the sauce, spaghetti and chicken. Repeat once. Top with grated cheeses and cracker crumbs. Bake at 325 degrees for 45 minutes or until bubbly.
