Chicken Salvadora

Bite-size pieces of chicken breast are coated with seasoned flour and cooked in oil, then heated with a mixture of raisins, grapefruit juice and salsa.
Ingredients
- 1/2 cup golden raisins
- 1/2 cup grapefruit juice
- 1/2 cup bottled salsa
- 1 lb boneless, skinless chicken breasts (or use tenders)
- 1/4 cup vegetable or canola oil
- 1/2 cup chopped onion
- 1 clove chopped garlic
- 1/2 cup flour
- 1/2 tsp ground cumin
- 1/2 tsp dry mustard
- 1/2 tsp turmeric
- Sliced green onion for garnish
- Cooked rice or pasta of your choice (optional)

Method
Combine first 3 ingredients in a small bowl and set aside. Cut chicken into bite-size pieces. In a large frying pan, heat the oil; add onion and garlic and cook over low heat until soft. Remove with slotted spoon and set aside. In a paper or plastic bag, mix together the flour, turmeric, cumin and mustard. Add chicken and shake it up. Shake off excess flour mixture from chicken and add chicken to the remaining oil in pan. Cook on medium heat for 5-10 minutes, until no pink remains inside, stirring pieces to lightly brown all of them. Add the onion and garlic back in and stir. Stir in the fruit sauce. Heat through. Remove to platter and sprinkle with green onion.
Notes: If using the pasta or rice, it can be prepared in advance, piled onto the serving platter and kept warm in the oven, covered with foil.
