Chicken Salad

Use your favorite variety of apple in this chicken and nut salad.
 

Ingredients

  • 3 large chicken breasts halves with bone
  • 1 good-sized apple, diced
  • 1-2 large celery stalks (depending on your taste), diced
  • 1/2 cup chopped nuts (I like walnuts or pecans)
  • mayonnaise
  • salt and pepper

Method

Season chicken with salt and pepper and bake in foil (about 50 to 60 minutes at 375 degrees). Discard any liquid; cool. Cut chicken meat into small chunks. More salt and pepper may be needed. Add diced apple, celery and nuts. Add mayonnaise to desired moistness. Place mound on bed of lettuce leaves to serve.

 

Notes: When served with hot rolls, bread, biscuits or crackers, this is a complete meal.
