Chicken Salad On Croissants

Craisins, pineapple and cilantro add unique flavor to this moist and creamy chicken salad. Add almonds or cashews for a bit of crunch.

  • Servings: 6-12

Ingredients:

6 Boneless Skinless Chicken Breast Halves; Cooked, cooled and cubed into bite sized pieces
1 cup Mayonnaise
1 cup Slivered Almonds or Cashews, or a combination
1 cup Crushed Pineapple With Juice
⅓ cup Craisins
1 Tbsp Chopped Fresh Cilantro or, to taste
1 tsp Salt
Pepper, to taste
6 Large Croissants or 12 Smaller Croissants

Directions:

Mix all ingredients together in a bowl and refrigerate until ready to serve, or at least 2 hours. Serve on croissants.
