Chicken Piccata

A delicious chicken piccata main dish created by pounding chicken breasts and simmering them with mushrooms and garlic in a lemon-wine mixture. Chicken piccata is a quick and easy main dish recipe.
 

Ingredients

  • 2 whole skinless, boneless chicken breasts, halved lengthwise
  • Salt and pepper
  • 1/4 cup flour
  • 4 tbsp. butter
  • 1 cup sliced fresh mushrooms
  • 1 garlic clove, minced
  • 1/4 cup dry white wine or chicken broth
  • 2 tbsp lemon juice
  • 2 tbsp chopped parsley

Method

Place chicken between plastic wrap or wax paper and pound chicken to about 1/4" thickness. Sprinkle chicken with salt and pepper, if desired; coat with flour. In a large skillet brown chicken in 3 tablespoons of the butter over medium heat about 5 minutes or till lightly golden. Remove from skillet and keep warm. Add remaining butter to the skillet and cook the mushrooms and garlic till tender. Return chicken to pan; add wine and lemon juice. Simmer 7 to 10 minutes, stirring occasionally, till sauce slightly thickens. Garnish chicken with parsley.

 

Notes: I serve this with wild rice and steamed veggies. It is really easy and quick to make.
