Chicken Picadillo

This picadillo recipe uses ground chicken and broth, plus onion, garlic, cumin, chipotle pepper, golden raisins, and green olives. It's served over rice and garnished with cilantro.
 

Ingredients

  • 2 tablespoons extra-virgin olive oil
  • 1/2 cup diced onion
  • 1 clove garlic, minced
  • 1 pound ground raw chicken
  • 1 teaspoon salt
  • 1 teaspoon ground cumin
  • 1 tablespoon chipotle pepper in adobo sauce, minced
  • 1/2 cup chicken stock
  • 1/2 cup golden raisins
  • 1/4 cup sliced green olives
  • 2 cups cooked rice
  • 1/4 cup chopped cilantro

Method

Cook onion, garlic, and chicken in oil 5-7 minutes. Stir in salt, cumin, chipotle, stock, and raisins. Simmer 5-7 minutes. Stir in olives. Spoon picadillo mixture over rice. Garnish with cilantro.

 

Notes: This quick and easy one-dish meal is a flavorful change from the boring skillet meal.
