Chicken Pasta Salad

Grilled and seasoned chicken breasts are tossed with pasta, seasonings, mayonnaise, onions, olives, artichokes and peppers for this delicious salad.
Ingredients
- 2 whole chicken breasts, split, skinned and boned (4 skinless, boneless breast halves)
- Grill seasoning
- 3/4 lb penne pasta
- 2 Tablespoons red wine vinegar
- 1 tsp oregano
- 1 tsp basil
- 1 garlic clove, minced
- 1/4 cup mayonnaise
- 1/4 red onion, sliced thin
- 1 roasted red peppers, sliced
- 1 small can sliced olives, drained
- 5 canned artichoke hearts sliced
- Parmesan cheese
- Fresh basil

Method
Season chicken breasts with grill seasoning. Grill about 5 minutes on each side or until cooked through. Set aside. Cook pasta in boiling water until al dente, drain and set aside. In a large bowl mix together vinegar, oregano, basil, garlic and mayonnaise. Add onions, olives, artichokes and red peppers. Slice chicken breasts into bite size pieces; add to mixture. Add pasta and toss together. Serve topped with parmesan cheese and fresh basil.
