Chicken on the Grill with Seasoned Potatoes

Chunks of chicken are marinated in an oil-vinegar-egg mixture, then grilled along with cubed potatoes & some marinade wrapped in foil.
Ingredients
- 1 lb skinless, boneless chicken breasts, cut into 2" pieces
- 8 red potatoes, cut into 1/2" pieces (leave peels on)
- MARINADE:
- 1 cup canola oil
- 1 cup apple cider vinegar
- 1 egg, slightly beaten
- 2 Tbsp poultry seasoning
- 2 garlic cloves, minced
- 1 tsp salt

Method
To make the marinade, mix all of the ingredients together with a wisk. Remove 1/4 cup of the marinade and reserve for the potatoes. Pour marinade over chicken (works best if marinated overnight) in a tightly closed container. When ready to grill, take the potatoes that are cubed, and place them in tin foil, a large enough piece that you can wrap the potatoes and seal without leaking. Pour reserved marinade over the top. Seal the foil packet, and then wrap one more time in foil, making sure to wrap the open end first. Grill the potatoes over indirect heat on the grill. After the potatoes have been on for about 10 mins, grill the chicken. Best served over slices of French bread with the potatoes on the side.
Notes: The best thing about this recipe is that you can add any fresh herb you desire to this for a different flavor.
