Chicken in Walnut Curry Sauce

Sauteed chicken in a highly flavored broth with curry powder, coriander and paprika. Serve over rice for a complete meal.
Ingredients
- 1 large chicken breast
- 3 cloves of garlic
- 1 large white onion
- 3 Tablespoons olive oil
- 1 cup of finely ground walnuts
- 1/4 cup of white vinegar
- 1/4 Tablespoon of curry powder
- 1/4 Tablespoon of red paprika
- 1 Tablespoon of salt
- 1 Tablespoon of coriander powder
- 2 cups of chicken broth
- 2 cups of water

Method
Cut chicken breast into 2 x 1 x 1 cubes. Chop onions and garlic and toss into a pot with oil to simmer. Add chicken to the onion and garlic mixture for approximately 10 minutes until chicken is cooked and no longer pink. In a separate bowl, mix up the ground walnuts with the spices, the vinegar and the broth. Make sure the entire contents are completely mixed together. After all is mixed well, pour contents into the simmering pot of chicken. Slowly add 2 cups of water to the simmering pot. Cook for 15-20 mins. and then let cool for 10 mins. before serving.
Notes: Garnish with fresh chopped parsley and a handful of pomergranite seeds if desired.
