Chicken in Lowfat Creamy Tomato Sauce

This healthy dish is prepared with yogurt, chicken, and fresh vegetables.
 

Ingredients

  • 1 lb boneless skinless chicken breast
  • 1 tbsp pure olive oil
  • 2-3 garlic cloves, chopped or 3 tsp minced garlic
  • 1 medium onion, diced
  • 1 large bell pepper, green or red, diced and remove seeds
  • 1 cup sliced mushrooms, optional
  • 1 14-15 oz can chicken broth
  • 3 tbsp tomato paste
  • 2 tbsp all purpose flour
  • 2/3 cup low fat plain yogurt, extra for topping
  • 4 cooked servings multigrain noodles or brown rice
  • Salt and pepper to taste
  • Fresh parsley for garnish

Method

Trim any fat from chicken and slice into approximately 1/4 inch thick pieces. In large skillet, heat oil on medium then cook chicken until it starts to turn white. Add garlic, onion, bell pepper, and mushrooms. Saute until chicken is fully cooked and onions have turned clear. Mix in tomato paste, chicken broth, flour, and seasonings. Stir well, bring to a light boil, and then simmer for approximately 10-15 minutes. Remove skillet from heat and mix in yogurt. Serve over either multigrain noodles or brown rice. Top with extra yogurt, and garnish with fresh parsley.

 

Notes: A delicious lowfat dish, full of flavor and filling too.
