Chicken in Cajun Cream Sauce

Chicken breasts cooked in a Cajun-spiced cream sauce goes great over cooked pasta.
Ingredients
- 1/4 cup olive oil
- 1/4 cup butter
- 4 chicken breasts, grilled/cooked and cut into strips (Louis Rich pre-cooked grilled strips are great, but they're expensive)
- 1 tomato, cut into chunks
- 1 jar roasted red peppers, cut into strips
- 1 to 3 teaspoons cajun seasoning (or according to your taste)
- 8 oz. heavy cream
- 1/4 cup grated parmesan cheese

Method
In large pan on stove top, heat olive oil and butter on medium. Add chicken, tomato, peppers, and Cajun seasoning, stirring until hot. Add cream and parmesan cheese, stirring occasionally. Lower heat and simmer for several minutes. Makes about four servings.
Notes: The sauce may be a little thin (in the high-carb version, the pasta usually soaks it up), but it still tastes AWESOME, and you can add some more parmesan to thicken it up. Enjoy
