Chicken Gravy Enchilada Casserole

If you like more heat in your Mexican dishes, use shredded Montery Jack cheese with jalapeno peppers for part of the cheddar cheese in this easy casserole.
Ingredients
- 4 cups diced cooked chicken
- 4 cups chicken gravy
- 1 cup water
- 1 cup chopped onion
- 3 stalks celery, chopped
- 1 can diced green chile peppers
- Garlic salt to taste
- Salt and pepper to taste
- 1 package corn tortillas (12)
- 2 cups shredded chedddar cheese

Method
In a large skillet combine chicken, gravy, water, onion, celery, chile peppers, garlic salt, salt, and pepper. Cover and simmer over low heat for 30 minutes. Preheat oven to 350 degrees. In a 11x14-inch baking dish, layer half of the tortillas, then half of the chicken mixture, then half of the cheese. Repeat layers. Bake for 30 to 40 minutes or until cheese is melted and bubbly.
