Chicken & Grapes in Wine Sauce

Chicken, vegetables and grapes complement the wine sauce in this recipe.
 

Ingredients

  • 3 whole chicken breasts, skinned, boned, halved
  • 3 med carrots, sliced diagonally
  • 2 tbs sliced green onions
  • 1/2 tsp grated lemon peel
  • 1/2 tsp dried rosemary leaves
  • 1/2 tsp salt
  • 1/8 tsp pepper
  • 1/2 C dry white wine or white grape juice
  • 2 tbs lemon juice
  • 4 tsp cornstarch
  • 2 tbs dry white wine or water
  • 1 C seedless green grapes

Method

In large skillet, combine chicken breasts, carrots, green onions, lemon peel, rosemary, salt, pepper, 1/2 C wine and lemon juice. Bring to boil; reduce heat. Cover, simmer 25 to 30 minutes or until chicken is tender and juices run clear. Place chicken on serving platter; keep warm. In small bowl, combine cornstarch and 2 tbs wine. Add to mixture in skillet; cook over medium heat until mixture boils and thickens, stirring constantly. Gently stir in grapes; cook until thoroughly heated. Spoon sauce over chicken.
