Chicken Fajita Salad

Chicken breasts cut in pieces are cooked with green pepper and onion, and moistened with salsa, then spooned over lettuce and drizzled with a sour cream, chili powder and cumin mixture.
 

Ingredients

  • 1/2 cup sour cream
  • 1/4 tsp. cumin
  • 1/4 tsp. chili powder
  • 1 tsp. lemon juice
  • 4 skinless, boneless chicken breast halves, cut into bite-sized pieces
  • Cooking oil
  • 1/2 medium green pepper, chopped
  • 1/2 medium onion, chopped
  • 1/2 to 1 cup salsa
  • 8 cups torn lettuce

Method

Mix the sour cream, cumin, chili powder and lemon juice together in a small bowl; refrigerate. Fry chicken in a small amount of oil until almost done. Add green pepper and onion; cook until chicken is done and vegetables are tender-crisp. Add desired amount of salsa to moisten; heat through. Remove from heat. Divide lettuce among 4 plates. Put 1/4 of chicken mixture on top of each plate of lettuce. Drizzle the sour cream mixture over the top.

 

Notes: I use around 1 cup of the salsa to moisten, because I love salsa.
