Chicken Fajita Pasta

Penne pasta is topped with a mixture of cooked, seasoned chicken strips, bell pepper, and salsa, then sprinkled with colby-jack cheese.
Ingredients
- 1/2 box penne pasta
- 1 tbsp oil
- 1 lb chicken breast strips
- 1 tbsp chili powder, or to taste
- 1 green or red bell pepper, chopped
- 1 tbsp garlic salt, or to taste
- 1 onion, chopped
- 1 tbsp lemon-pepper seasoning, or to taste
- 1 cup salsa
- 1 cup shredded Colby-Jack cheese
- Sour cream

Method
Cook pasta according to package directions. While pasta is cooking, season chicken strips with chili powder, garlic salt and lemon pepper. Cook strips quickly in a skillet. When chicken is almost cooked through, and green pepper and onion then cook until crisp-tender. Drain pasta and place in a 2-qt oven-safe casserole dish. Top pasta with chicken and vegetable mixture. Pour salsa over mixture then top with cheese. Place under broiler about 5 minutes until cheese is melted. Serve topped with sour cream, if desired.
Notes: Substitute beef or pork strips for chicken. If desired, you may make a double recipe of this and freeze half in a second freezer/oven-safe dish to thaw and heat later.
