Chicken Fajita Breakfast Bake

Fajita-seasoned chicken strips are combined with thawed hash browns, Mexican-blend cheese, eggs and milk. It's baked, cut, and served with salsa.
 

Ingredients

  • 1 pound of fajita-seasoned chicken breast strips
  • 1 bag of frozen O'Brien hashbrowns (thawed)
  • 1 12 oz. bag of shredded Mexican-blend cheese
  • 12 eggs, beaten
  • 1 1/2 cups milk
  • Salsa

Method

Combine chicken, thawed potatoes, cheese, eggs and milk. Mix well. Pour into well-greased 9x13 baking dish or pan. Bake at 350 degrees for 1 1/2 hours or until eggs are set. Serve with salsa.

 

Notes: For a fancy look, garnish with tomatoes and hot peppers of your choice!
