A simply delicious casserole--chicken and tortillas layered with cheese in a creamy sauce.

  • Servings: 6


1 lb Chicken Breast, chopped to bite sized pieces
1 Tbsp Italian Seasoning
1 Tbsp Minced Garlic
2 Tbps Oil
Salt & Pepper, to taste
½ cup Heavy Cream
1 Tbsp Butter
½ cup Green Salsa
2 cups Shredded Mozzarella Cheese
6 Taco Sized Soft Tortillas Torn Into Quarters


Preheat oven to 350 degrees. Heat oil in a large frying pan. Brown chicken seasoned with Italian seasoning, garlic, salt and pepper to taste. Add cream, butter and green salsa to pan, then simmer 5 minutes.

Add 1 cup mozzarella and stir until melted and remove from heat. Spray a 8 X 8 baking dish with nonstick spray. Layer with half of tortillas. Spoon half of chicken mixture over tortillas. Layer remaining tortillas, then spoon remainder of mixture over the top. Sprinkle with remaining mozzarella. Bake about 15 minutes until cheese is melted and beginning to turn golden. Let sit 5 minutes to thicken sauce before serving.
